My parents are Jamaican and English. The reason I chose this Jamaican dish is because it’s easy and very, very filling. I hope you enjoy it.
Ingredients
1 tin corned beef
1 tbsp. all purpose seasoning
1 medium onion, finely sliced
2 cloves garlic, crushed
1 tin sweetcorn, drained
1 pepper, finely sliced
2 tbsps. ketchup
1 tbsp. Worchester sauce
1 tsp. chilli powder
600g potatoes, peeled and chopped
Method
Pre-heat the oven to 180 degrees
Gently fry the onion, garlic and pepper in a frying pan with a little oil for five minutes
Next, add the corned beef and with a spoon break the meat down into a mince like mixture
Add the drained tin of sweetcorn then add the all purpose seasoning, ketchup, Worcester sauce
Place the peeled and chopped potatoes in a pan of boiling water and cook for 15-20 minutes, until soft
Place the meat mixture into an oven proof dish
Drain the potatoes and mash with a little butter. Place the mash on top of the meat mixture, sprinkle over some salt and pepper and bake for 30 minutes.
